You can’t get anything much better than an iced coffee in the middle of summer. Even on a rainy day, there’s something special about a perfect iced coffee to beat the heat. In the past I had tried brewing coffee and letting it cool, but nothing is better than cold brew coffee. My love of coffee and pinterest collided when I came across several cold brew coffee recipes. The one I love most is this one, which creates a coffee concentrate that is diluted with water to taste when you serve it.
It’s very easy! Just mix together 1/3 cup coffee grounds with 1 1/2 cups water and let sit for at least 12 hours. Strain (or use a french press) and it can be refrigerated until you’re ready to use it. This time I used coconut coffee, and I could not be happier with how it turned out. Topped with a little whipped cream and it’s the perfect companion for a little hazy-Monday-morning blog reading!
