Missing Cooking

As another semester comes to a close, I am reflecting on how busy the past few months have been.  As much as I’ve loved the amazing opportunities and appreciate the wonderful people in my life, I’m ready for some time off.  One thing I’ve missed most is cooking real meals.  Too many meals have become takeout, or baked chicken, lacking in enough vegetables and variety from week-to-week.

The other night we actually had time to cook, and I was able to try a new recipe – chicken puttanesca with orzo from Martha Stewart Living.  For me, having time to cook means having time to decompress and be creative in a different sense.  It also means making pretty plates like this one:
